FINOCCHIONA – the well known Tuscan slicing salami seasoned with fennel. The producer, Carlo refuses to use cultivated fennel in his salami and every September his mother collects pollen from the wild fennel that grows locally. Some flowers she leaves in order to collect the seeds at a later date.
A one-off supper club of fine artisan food and drink, sourced via markets and shops in Bermondsey, Borough and Peckham. Held on Friday 23rd March, at Andersons Cafe of Bellenden Rd, Peckham. A fixed price of £30 per head all in.
