We found this fantastic mozzarella at the Ham and Cheese Company in Bermondsey. They sourced the cheese from Piana del Sele in Campania. This is an area south of Naples on the plain of the river Sele. This has wet, marshy land, perfect for water buffalo. The mozzarella has a creamy, slightly sour flavour flavour with a velvety texture. We will be serving it with the Parma Ham, whose slight saltiness just brings out the mozzarella flavours nicely.

Mozzarella Di Bufala Campana
